Gluten free diets are becoming increasingly more popular. Not only due to the increasing number of people with gluten allergies and gluten intolerance, but because of the overall health benefits this kind of diet offers. The human body produces all the glutamate it needs on its own. So by consuming more, we create an excess within our bodies that can become toxic.
Foods with gluten are processed from foods with any level of glutamate. This could include foods you think are gluten free like tomatoes. Of course the more well known culprits are wheat and other grains such as barley and rye. In their raw form these foods can be extremely healthy. The part that makes these seemingly healthy natural foods unhealthy comes when they are cooked, processed and sometimes mixed with preservatives.
People who switch to a gluten free diet also enjoy other benefits including lowered blood pressure and weight loss. When adopting the gluten free diet, we are no longer eating as many bread and pasta products. In fact greasy fried foods are all but eliminated from the diet and we are left to eat healthy whole foods by default.
